Bonnie's Veggie Stir Fry

Veggie Stir Fry

Ingredients 
1 onion, chopped                                                        1 stalk celery, chopped
2 carrots, chopped                                                      1 clove garlic, minced
1 head broccoli, chopped                                           1/2 cup peas
1 tablespoon oil                                                          salt and pepper to taste

Directions
Place pan on the stove over medium heat. Add garlic and oil, stir for about 2-3 minutes. Add all of the vegetables, salt, and pepper. Fry for about 15 minutes, stirring occasionally (until vegetables begin to soften)

Serve hot, over rice or as a side. Makes a great dish for the work week.

**can substitute with almost any vegetables you have I have also used cauliflower, beans, corn, leeks, zucchini, ext. 
**if you eat meat you can use bacon grease in place of oil, but this will make it a little less healthy 

Because the vegetables can be easily switched out this is a basic recipe I can eat every day without ever getting bored. I use this as a guide, adding and subtracting items each time to get a slightly different taste.
