Easy Apple Muffins

Ingredients

1 box yellow cake mix                                                                3 eggs*

1/4 cup oil*                                                                                 1/4 cup water*

2 tablespoons cinnamon                                                              4 apples, chopped

2 tablespoons poppy seeds                                                         1/2 cup pecans or walnuts, optional

*oil, eggs, and water is the measurements written on the box, this may vary depending on the brand of cake mix you buy

Directions

Preheat oven to 350 (unless the cake box says otherwise). Grease muffin pans and set aside

Mix cake mix, eggs, water, and oil well. Add cinnamon and poppy seeds, stir well. Gently add pecans and apples

Scoop into muffin pans. Cook about 5-10 minutes for mini muffins, 15-20 for larger muffins

Yield: about 30 large muffins or 60 mini muffins

**for high altitude add about 2 tablespoons flour with cake mix (I am at 7,600 feet)
