Fast and Easy Potato Leek Soup


Bonnie's Potato Leek Soup


Ingredients
1 cup butter                                                                         2 leeks, sliced small
salt and pepper to taste                                                       1-quart chicken broth
1 tablespoon cornstarch                                                      3 Idaho potatoes (or other large potatoes)
2 cups milk 

Directions
In a large pot melt butter over medium heat. Add leeks, salt, and pepper; cook about 15 minutes (until leeks are soft)

Stir cornstarch into the chicken broth, add the broth to the soup; stir.

Dice potatoes and add to pot. Bring to boil. Add milk and reduce heat. Simmer for 30 minutes. 

Potato should be tender, continue cooking longer if not. 

Season with additional salt and pepper if needed.

**I like to top mine with green onions
