Colorful Carrot Cake

Bonnie's Colorful Carrot Cake


Ingredients
4 large eggs                                                                                2 cups sugar
1 cup vegetable oil                                                                     2 cups all-purpose flour*
3 teaspoons cinnamon                                                                2 teaspoons Chinese 5 Spice
3/4 teaspoon baking soda                                                           1/2 teaspoon baking powder
1/4 teaspoon salt                                                                         2 cups grated carrots (half purple)

Directions 
Preheat oven to 350. Grease pan or the muffin tin that you will be using, set aside

Mix oil, eggs, and sugar in large bowl. Slowly add flour, spices, baking soda, baking powder, and salt. 

Gently mix in carrots.

If making muffins bake for 12-15 minutes. For a cake bake 35-40 minutes.

*if cooking at altitude at 2 tablespoons of flour (I am at 7,600 feet and this works for me)
