Califlower and Bacon Mac and Cheese

An easy way to change up one of the most popular dishes in America.

Also by adding vegetables, it makes the pasta and dairy dish much more balanced.

If you make your own mac and cheese feel free to use this in your recipe rather than using boxed. I prefer the taste of boxed over homemade mac and cheese so I am using a box for this.


Bonnie's Cauliflower-Bacon Mac and Cheese

Ingredients
1 box of mac and cheese                                                             1 tablespoon butter*
1/4 cup milk*                                                                              2 slices of bacon, cooked and chopped
1/2 cup cauliflower, chopped

Directions
Fill pot with water and place over high heat. When it begins to boil add noodles and cauliflower, cook until noodles are tender

Drain water. Add cheese packet, butter, milk, and bacon bits. 

I use this as an easy weekday lunch. One package of mac and cheese will last me 3 days at work (when used as a main with side dishes)

*milk and butter measurements may vary depending on the brand you use. I used Annie's so just make sure to follow the measurements listed on your mac and cheese box. Some mac and cheese (like Velveeta shells) will not require any milk or butter

**carrots and broccoli can be other good replacements for cauliflower, chicken or just more veggies can be used in place of bacon if you do not consume red meat. 
If you are vegetarian simply skip the bacon, add more veggies if desired.
