Alfredo Shells and Spinach Recipe


This meal took less than 30 minutes using just 5 ingredients. Perfect for a busy weeknight meal, with tons of protein from all the spinach.

Alfredo Shells and Noodles

Ingredients
1 box jumbo shells
1 can alfredo sauce (I prefer garlic and herbs, but any will work just fine)
1-2 cups of spinach
1 tablespoon butter 
1 cup shredded cheese of your choosing (I chose Mexican style, parmesan works too)

Directions
Preheat oven to 350. Spray casserole dish with nonstick cooking spray and set aside.

Place water in pot on stove on high, when it begins to boil add noodles.

While the water is heating place butter and 1 cup of spinach in a pan over medium heat. Cook about 5-7 minutes, until spinach is tender and no longer bright green. 

Add alfredo sauce. Stir until warm.

Strain noodles, place in casserole dish. Place Alfredo sauce on top of noodles, evenly spread across pan. 

If desired add 1 cup raw spinach on top. 

Add shredded cheese

Bake 10 minutes, just long enough to melt cheese
